Apricot Friands with Orange Mascarpone Frosting

Ingredients: FRIANDS

  • 185g butter, melted
  • 6 egg whites
  • 120g ground almonds
  • 240g icing sugar
  • 75g flour, plain
  • 1tbsp orange-flavoured liqueur (e.g. Cointreau)
  • 1tsp finely grated orange zest
  • 180g dried (or glacé) apricots

Ingredients: ORANGE MASCARPONE FROSTING

  • 125ml cream (35%)
  • 2tbps icing sugar
  • 1tbsp orange-flavoured liqueur (e.g. Cointreau)
  • 125g mascarpone

Directions:

Preheat oven to 200C. Grease 12-hole (125ml capacity) oval friand pan with butter. Chop apricots,
reserving a few for decoration. Place egg whites in large bowl.

Whisk egg whites lightly with a fork. Add butter, then ground almonds.

Sift in icing sugar and flour, add liqueur and orange zest.

Mix the ingredients well. Add chopped apricots and mix until combined.

Divide mixture into pan holes. Bake friands about 20mins.

Remove from oven and turn (top-side-up) onto wire rack to cool. In the meantime, make frosting.
Beat cream, extra icing sugar and liqueur in a bowl with electric mixer.

Gently fold in mascarpone. Spread frosting over friands and decorate with thinly sliced apricots if
desired.
