Step-by-step Recipe
Ingredients:
- 90g chopped dried apples
- 125ml boiling water
- 125g butter
- 95g soft brown sugar
- 1 egg
- 75g rolled oats
- 125g flour, self-raising
- 1tbsp cinnamon sugar
- 25g desiccated coconut
Note: If you don’t have self-raising flour, use plain flour instead and add a pinch of baking
powder. You can use dried apricots instead of apples. To make cinnamon sugar, mix equal
amount of ground cinnamon and sugar.
Directions
Preheat oven to 180C. Combine apples and water in a bowl, stand for 5mins, or until all the water
is absorbed. In a separate bowl beat butter and sugar until light and creamy.
Lightly beat the egg and add it to the butter mixture. Beat until well-combined.
Add oats, coconut, apples and flour. Using a metal spoon, stir until just combined.
Grease two baking trays and line with baking paper. Drop heaped tablespoons full of mixture onto
trays, making sure to allow room for spreading during baking. Sprinkle with cinnamon sugar.
Bake 20mins or until the biscuits are lightly golden. Transfer to wire racks to cool.
