I used to go crazy for fudge, but these days it has to be something more deliciously-sophisticated. This recipe presents a 3-layer delight (in every bite), with a cheesecake-inspired vanilla layer in the middle.
Mango and five spice make a brilliant partnership here, and the flavours are zinged up by lime and mellowed by a brûléed topping. You can replace mangoes with peaches or nectarines if desired for another fabulous variation.
This classic dessert is topped with a cloud of raspberry custard that contrasts beautifully with the rich dark chocolate layer.
I have to confess – I cheated a little. I first published this recipe earlier in the year, but not in a step-by-step format. I finally got around to revisit it, just in time for the raspberry season.
