Step-by-step Recipe


  • 100g butter, melted
  • 100g sugar
  • 150g flour, plain
  • 3 eggs
  • 1 orange
  • 1 lemon


Preheat the oven to 200C. Brush a tray of madeleine moulds with melted butter and coat with flour,
then tap the tray to remove the excess flour. Grate the zest of orange and lemon.

Wisk the eggs and sugar until the mixture is thick and pale and the whisk leaves a trail when lifted.
Add the flour.

Gently fold in the flour, then the melted butter.

Carefully mix in the butter, then add the zest of orange and lemon. Ensure the mixture is smooth
and well-combined.

Spoon the mixture into the moulds, leaving a little room for rising. Bake for 12 min or until very
lightly golden and springy to the touch. Remove from the tray and cool on a wire rack.
